 SUMMER SPECIAL MANGO AND RED RICE SALAD

Ingredients:

Red rice- (cooked and cooled)-1 cup

Spring onion-1 bunch (finely chopped)

Bell pepper- 1 cup (finely chopped)

Mango – 1 small (diced)

Lemon juice- 1 tbsp

Extra virgin olive oil-1 tsp

Salt –acc taste

Pepper-acc taste

Mint leaves- (for garnishing)

Green coriander-(for garnishing)

Method:  

Soak red rice in water for 3-4 hours before cooking. Cook rice in pressure cooker up to 3-4 whistles. Off the gas. Now allow it to cool. Take a big bowl; add rice, spring onions, bell pepper and mango pieces. Put lemon juice, extra virgin olive oil, salt and pepper in another bowl and mix properly. Now pour this seasoning over salad and toss  well.  Garnish with mint and coriander leaves.
