Grilled zucchini sandwich

 Ingredients-

Zucchini 4 slices – trimmed and cut into lengthwise

2 tea spoon extra virgin olive oil, divided

1 garlic clove

½ tsp balsamic vinegar

Salt acc to taste

Black pepper- acc to taste

4 piece whole wheat bread

4 large fresh basil leaves

1 medium tomato, thinly slice

Feta cheese- 50 gm

Method

Heat a large grill pan over medium- high heat, place zucchini in a shallow dish. Add 1 tsp oil and garlic, toss the coat, arrange zucchini in grill pan; cook 2 min on each side until grill marks appear return zucchini to shallow dish, drizzle with vinegar. Sprinkle with salt and black pepper.\brush bread with the remaining oil. Top evenly with zucchini, basil tomatoes and feta cheese. Now serve.
