Broccoli almond soup
Ingredients
3-4 broccoli florets
1/2 cup chopped, broccoli stalks
1 small onion chopped
3-4 garlic cloves, chopped
1 tsp olive oil
5-6 almond , soaked for 4-5 hours and peeled
1 cup vegetable stock or water
1 tsp lime juice
salt and pepper to taste
50 ml almond milk for topping
soak the almonds in a jug of cold water for a few hours.
Take a saucepan and heat olive oil. Add chopped onion and garlic and saute over a medium-high heat for a few minutes until browned. Then add the chopped broccoli stalks and sauté for 2 more minutes.
Add the vegetable stock or water and drained almonds, and simmer over a low heat for 10 minutes.
Stir in the broccoli florets, put the lid on and simmer for 3 minutes.Transfer the mixture to a blender together with the lemon juice and salt and black pepper, and blend until smooth.
Check the consistency of the soup is how you like it. If you want a thinner soup, just add some more vegetable broth or water, or you could even add a little almond milk for an even creamier flavour.
