Amaranth upma
Ingredients
1/2 cup Amaranth ( washed nicely and soaked for 2 hours )
1 tsp desi ghee
1/3 tsp mustard seeds
8-10 curry leaves
1 tsp urad dal
1 small onion ,chopped
1 cup chopped veggies ( carrot , beans, broccli )
1 tbsp fresh green peas
salt to taste
1 fist full chopped fresh coriander to garnish
2 tsp lime juice
method to cook amaranth
Cover and cook amaranth in 1 cup of water for 10 mins or untill all water disappears.Let it cool down a bit before adding to vegetables)
Method for recipe
To stir veggies take a pan add 1 tsp desi ghee, add mustard seeds and wait till splutter.then add add chopped onion and saute till light brown. Add curry leaves and urad dal and then add veggies and green peas and stir well. Add salt and cook untill the veggies are tender in low flame.then add cooked amaranth to it , mix well . add 2 tsp lime juice and garnish with chopped corinder.
